Virginia "Ginger" Kay Mineer, 67, of Paxton, died Tuesday, February 28, 2023, at Carle Foundation Hospital, Urbana.

Funeral services will be 2:00 p.m. Friday, March 3, 2023 at Baier Family Funeral Services, 406 E Pells, Paxton with Pastor Marcus McCollom officiating. Burial will follow in Glen Cemetery, Paxton.

Visitation will be one hour prior to the service from 1:00-2:00 p.m. Friday at the funeral home.

Ginger was born February 17, 1956, in Paxton, the daughter of Howard Stanley and Shirley Ann Weburg Mineer.

She is survived by a brother, Steven (Sharon) Mineer of Bigfork, Montana, and two nephews and their families whom she loved very much.

Ginger graduated from Paxton High School in 1975 and earned a CAN certificate from Parkland College. She worked as a nurses aide at the Illinois Knights Templar Home in Paxton and as a veterinary assistant at Beaumont Animal Clinic in Urbana. She was a compassionate and gentle soul who enjoyed her work. She retired in 2016 to care for her elderly mother.

Ginger was a lifelong member of the Evangelical Covenant Church in Paxton where she faithfully participated in the adult Sunday school class, often encouraging others to attend. She served on the Christmas decorating committee and enthusiastically helped in the church kitchen. She lived her life with faith and perseverance and cherished her church family.

Ginger enjoyed cooking and amassed a large collection of cookbooks and kitchen gadgets to create her culinary delights. She also raised several wonderful dogs during her lifetime.
